My fellow blogger, Eric Hason (of I Am What I Eat) finally relented and gave me his über-simple recipe for brussel sprout salad, pictured here.
1. Grate raw brussel sprouts
2. Dress w/ olive oil, lemon juice, S&P,
3. Grate in lots of Parmesan cheese
He says: “It is really good.” And as you’ll see from his photography, this guy eats well.

Oh my! That does sound yummy and must give it a try this year. I’m growing Brussels Sprouts ‘Long Island Improved’ for the first time here and have been looking for different ways to prepare them. Harvest starts after a few fall frosts and we’ll have plenty plenty!!

I’m going to be totally honest. I tried this recipe, and it just didn’t do it for me. I even added some toasted pine nuts to oomph things up. No dice. My conclusion? Raw brussel sprouts are just too strong-tasting for me. Maybe this recipe will be to some of your tastes, however. Good luck!
