-1 piece whole wheat pita bread/flatbread, halved
-1/2 lg. ripe tomato, cut into medium slices
-4 Tbsp. Asmar’s hommus (or your favorite brand)
-2 Tsbp. fresh parsley, chopped
-kosher salt, fresh ground pepper
-fruity olive oil
1. Pop the pita bread in the toaster for one cycle. Rotate and toast again.
2. Spread with hummus, top with tomato slices, parsley, salt and pepper to taste.
3. Drizzle with olive oil.
