I’m sometimes at a loss for side dishes, especially ones that aren’t starchy and laden with cheese (mmm, cheese). This is a recipe I came up with after watching the Queen of Butter and Bacon, Paula Deen, make something similar. Fortunately, it’s relatively light, for anyone with a New Year’s resolution to keep.
-1/2 c. sliced almonds, toasted
-1/2 – 3/4 c. dried cranberries, raisins, or both
-2 stalks celery, chopped
-1 small green apple, cored and chopped
-1 1/2 – 2 Tbsp. mayonnaise (or to taste)
-1 1/2 – 2 Tbsp. sour cream (or to taste, or use all mayo)
-2 Tbsp. honey mustard
-1 tsp. honey, optional
-1 tsp. sugar (or to taste)
-salt and pepper
-splash of milk
-approx 2 Tbsp. apple cider vinegar (or to taste)
Combine the wet ingredients, then fold in the dry, ending with the toasted almonds. Allow to sit 15-20 min., then serve.
