Our freezer is currently full of pork chops after a big sale at the grocery store. My favorite method is to marinate and quickly grill them, so they stay juicy. Sorry, you’re not getting anything more elaborate until I’m feeling better.
-2 center-cut pork chops (really, any cut will probably do, just adjust cooking time)
-1 good-sized shallot
-4 sprigs of fresh thyme, stripped
-2 cloves garlic
-2-3 Tbsp. olive oil
-lots of fresh ground black pepper
-1/2 tsp. or less salt or seasoned salt (be careful if your lemon pepper includes salt)
-2 tsp. lemon pepper
-splash of soy sauce
1. Mince the garlic and shallot.
2. Combine with all remaining ingredients in a large zipper bag (Ziploc), rub all over the pork chops, and marinate at least 30 min.
3. Bring meat back to (cool) room temperature before grilling on a pre-heated grill, 8 min. total, or until done.
Note: if you don’t have a grill, you could broil these quickly in the oven, or pat dry and sear in a pan. I have bad luck baking pork chops, but if you get good results, knock yourself out.
